There's two reasons contributing to that reaction: one, being that she really hadn't expected her guess to be correct, and two, that all of his mooning earlier clearly meant that this Stede was important to him. Maybe more important to him than just a friend or business partner.

As much as her nose for romantic gossip is tingling right now, she's hardly about to call him out on it now as they arrive in front of the stall and he says something else rather peculiar. It seems she's not the only one who catches that. The merchant raises an eyebrow and it's up to Hilda to try and smooth the situation over with a tittering laugh. ] 

I feel like innkeepers these days aren't very proactive about the security of their inns. It'll be a great selling point for your future one! No one wants to stay at an inn they don't feel safe in.
